Blueberry Muffins

Indulge in the delightful burst of juicy blueberries with these tender and irresistible blueberry muffins, perfect for a sweet breakfast or snack.

INGREDIENTS

  • 2 cups all-purpose flour

  • 1 cup granulated sugar

  • 1 tbsp baking powder

  • 1/2 tsp baking soda

  • 1/4 tsp salt

  • 1/2 cup cannabutter

  • 1 cup milk

  • 2 large eggs

  • 1 tsp vanilla extract

  • 1 1/2 cups fresh or frozen blueberries

  • (Optional) 1 lemon for zest

INSTRUCTIONS

  1. Preheat your oven to 375°F (190°C) and line a muffin tin with paper liners.

  2. In a large mixing bowl, whisk together the flour, sugar, baking powder, baking soda, and salt until well combined.

  3. In a separate bowl, whisk together the melted cannabutter, milk, eggs, and vanilla extract until smooth.

  4. Pour the wet ingredients into the bowl with the dry ingredients, folding until well smooth. Be careful not to overmix.

  5. Gently fold in the blueberries and (optional) lemon zest into the batter.

  6. Using a scoop or spoon, fill each muffin cup about 2/3 full with the batter.

  7. Place the muffin tin in the preheated oven and bake for 18-20 minutes or until a toothpick inserted into the center comes out clean.

  8. Allow the muffins to cool in the tin for 5 minutes, then transfer them to a wire rack to cool completely.

  9. Once cooled, remove the muffins from the tin and enjoy responsibly.
